The collaboration between St. Jodern Kellerei and Fredi Torres began in 2020, driven by an uncompromising dedication to Heida and the vineyards of Visperterminen. The aim was to bring this unique gem into the spotlight.

Initially, two Heida-based wines were produced: 1,500 bottles from young vines and an extremely exclusive cuvée from old vines (300 bottles). These are fascinating wines that respect the DNA of this magical grape variety, born in such a distinctive, terroir-driven place – an extraordinary heritage that must be preserved in the face of such extreme viticulture.

In 2022, we took it a step further and ventured into a highly limited cuvée of Pinot Noir, intended as a rare stylistic expression in Valais. In this vintage, the focus was on finesse of tannins and vibrant fruit. It was only in 2023, however, that we reached a true pinnacle with an exceptional Pinot Noir. Since then, we have been working to maintain this subtle elegance and freshness, rarely found under the Valais sun.

Our project is a union of deep respect for tradition and a commitment to avant-garde precision in the small details that define our uniqueness

Fredi Torres

Born in Spain in 1977, Fredi Torres grew up in Switzerland, where he also completed his entire schooling.

After studying sound engineering and pursuing a career as a DJ in the 1990s, he went on to become an oenologist.

Over the course of 20 years, he established himself in Spain through various projects in Catalonia, Galicia, and other regions, which remain a key foundation of his work to this day.

A man of many facets, he founded the wine fair ‘Vinos Off the Record’ ten years ago, which has since become one of the most renowned of its kind, held annually in February in Barcelona and in November in Madrid.

For the past two years, he has also brought this concept to Lausanne with ‘OFF’ (“Wines Off Switzerland”) – the only Swiss wine fair aimed at both Swiss professionals and an international audience.”
